The whole family loves steel-cut oatmeal, even my husband, for whom it was a bit of an acquired taste. This is my own recipe, combining anti-inflammatory cherries, healthy coconut oil, and almonds. Enjoy! (My apologies for the quantity, but that’s how we cook in this big family!)
- 3 cups steel-cut oats
- 12 cups water
- 1 cup tart red cherries
- 3/4 cup coconut oil
- 1 cup slivered almonds
- 1 cup sugar
- 1 cup cream
- 2 teaspoons vanilla extract
Combine the oats and water in a large pot and bring to a near boil over high heat. Reduce heat to simmer and cook for 45-60 minutes, until oats are done. Add remaining ingredients and stir thoroughly.
I’d never thought of putting coconut oil in my porridge. I think I know what’s for breakfast tomorrow!
